A Better Way to Gather

EATS Cooking Co. started with a food truck in downtown Truckee and a simple conviction: food tastes better when it's sourced with a conscience and shared around a table.

The Chef

Tommy Adkins

Tommy fell for Tahoe as a kid, spending summers in the mountains, and moved here for good as soon as he could. Food came with the territory — his grandfather ran Rancho Grande, a 10,000-acre cattle ranch outside Sacramento, and that connection to Northern California ranching still shapes how EATS buys meat today.

He's run the EATS food truck since 2016, parking in downtown Truckee and cooking for festivals, weddings, and gatherings across the region. The catering side grew the same way most good things do around here: someone ate the food, then asked him to cook for the people they love.

Tommy is hands-on at every event — writing the menu, sourcing from ranchers and farmers he knows by name, and cooking it himself. When you inquire, he's the one who reads it and the one who calls you back.

"A comfort zone is a lovely place where nothing grows."

What We Stand On

Ethically Sourced × Consciously Crafted

Humane Meats

Animal products come from humane-certified producers and ranches pushing the envelope on animal ethics — many of them neighbors in the Northern California food system.

Responsible Seafood

Seafood meets Seafood Watch and Safina Center standards, including California rock lobster chosen specifically for its sustainable fishery.

Seasonal & Local

Menus follow the seasons and lean on Northern California growers — which keeps money in local hands and flavor on the plate.
